BURO Bites: Fuego at Troika Sky Dining Unites the Latin Spirit with KL’s Skyline

Our take on the iconic rooftop dining destination, Fuego at Troika Sky Dining, known for its Latin fare and stunning views of KL.
While restaurants with a view are a dime a dozen here in Kuala Lumpur, there are only a handful that have a menu that matches its scenery. Boasting all things fiery and flavourful, Fuego has long been a major name in the local restaurants scene, serving spirited Latin American plates in a relaxed and lively space. While its menu and logo may have gotten a refresh, its character and core dishes have remained.

We recently stopped by for a quick taste of its new offerings and left feeling more energised than when we first arrived. Not only were we treated to dishes that speak volumes about the kitchen team’s skill, but we were also surrounded by a bubbly crowd, an enthusiastic team, plus some upbeat music to boot. And did we mention it was a weekday?
GUACAMOLE & CEVICHE
We started off our meal with a smoked duck guacamole. The addition of salty and crunchy little bits of meat added a whole new dimension to one of my all-time favourite dips. Served with the restaurant’s popular root vegetable chips, the guacamole is a definite must-order at any table.
To bulk up our appetiser course, we also tucked into the signature Fuego ceviche. The dish combined a bright and tangy combination of barramundi, coconut Tiger’s Milk, shiso gremolata, vinegar puy lentils, and toasted coconut. With barramundi being a mellow and butter fish, the milky and slightly tart dressing was a treat.
LIGHT PLATES
Following the cold appetisers were the first few of our hot plates. As a self-proclaimed offal enthusiast, I immediately dug into the beef heart anticucho first, which was meaty, chewy, and charred all at once. In my eyes, it was the star of the meal. My dining partner, on the other hand, isn’t a fan of entrails, to which I responded with “great, more for me.”
Meanwhile, the classic grilled watermelon was exactly like I remembered it from my last time eating it a couple of years ago—a testament to the restaurant’s consistency. Although I’m personally not a fan of grilled watermelon as a whole, Fuego’s version is well-seasoned and I can see why most tables at the restaurant had at least one plate of it on them.
Lastly, the prawn arepa was a sweet surprise with the texture and overall composure of the dish being a real winner. Nice and crisp on the outside and fluffy on the inside, the arepa itself was a delight to bite into. On the other hand, the prawns were crunchy and sufficiently dressed in a summery sauce with peppers.
BIG PLATE
For our main, we were presented with freshly grilled whole sea bass, lathered in a smoked chipotle paste. The fish itself was cooked to tender perfection, while the sauce offered a little kick and tons of smokiness that we couldn’t get enough of.
DESSERT
Our meal ended with a show as we were served the Fuego berries pavlova, complete with a flambé. Though it erred on the sweeter side of things, it was a much-needed dessert after a meal of such fiery flavours.
