Our list starts strong with Taman Tun’s latest addition: Koji. Its menu treads the line between Japanese and Italian, taking strong cues from both cuisines. Diners will get to experience the best of both worlds in each dish. Standout plates include its akaebi nori taco, finished with a wasabi mascarpone; the signature kamameshi claypot rice with unagi, burdock root and lard; and the twice-cooked Angus short rib, served with salsa crudo di pomodoro and tempura shishito

Take your porky cravings to Kinfolk over in Sea Park, Petaling Jaya, where dry-aged cuts take centre stage in many forms. You can start your meal with a homemade charcuterie board, crackling and pickles, or even a porchetta di testa to line your stomachs before moving on to the big guns. Pasta lovers will fall in love with its pork ragu bucatini, while others who prefer a more stripped back approach to their pork will appreciate the dry-aged pork chop with yuzu kosho. Its pork burger, mussels salai masak lemak, and smoked char siew pork ribs would also be worth adding to your meal for extra bulk!

The shiopan craze isn’t just a phase and Salt Bake’s entire lineup proves it. Everything on the menu is made with a salt bread base from its rolls to its bagels, so you can enjoy the cult favourite bake in every bite.  Its creations are made with Bario Highland salt, produced in Sarawak’s Kelabit Highlands by its local Orang Asli communities. The salt is smoked in bamboo, which results in a mild-tasting, mineral-rich finish that fits right into the bread. Variations are aplenty here, including serunding, appam balik, and ube taro.

Nomu Co. is Hin Bus Depot’s latest newcomer taking over the Shokudo Niban space, bringing the cocktail prowess of industry veteran Adrian Foo and chef Su Kim Hock’s culinary chops together under one roof. In the spotlight is a lineup of smooth and refined cocktails that feature elements from Japanese cuisine—take its whisky-high and yuzu sour for example. However, it also makes room for local inspiration with the likes of a Kaya Toast Alexander and Jambu highball also earning a spot on the menu. As for the supporting bites, chef Su has come up with small plates that will do well as pairings and on their own. Just like the drinks menu, the bites—including herbal clam soup, stir-fried sio bak, and cold Nagaimo noodles—also come with both Japanese and local flavours, so you won’t have to pick one or the other.

11. ROOT HOUSE BY GEN – PENANG

Root House by Gēn brings together all the pillars of Malaysian-Chinese cooking in one space. As its name suggests, the menu here goes back to the roots of Hainanese, Hakka, Cantonese, Teochew, and Hokkien cooking and brings them to today’s world with modern techniques. The restaurant is helmed by the team behind one of George Town’s most forward-thinking eateries, so diners can expect to be presented with new-style takes on familiar flavours. We’re talking crispy mantis prawn roll with fermented beancurd sauce, jungle garlic black chicken soup, and Fuzhou red wine chicken with young ginger. Its space is divided into three rooms: The Dining Hall, The Lounge, and The Bar, so diners can make a full experience out of their time here.
