What is washoku
An entire floor dedicated to showcasing the best of washoku—an overarching term for Japanese cuisine—has been unveiled on the fourth level of Isetan The Japan Store. Housed within the intimate space soaked in the warmth of ambient lighting and cosy furnishing of wood and stone are five restaurants (and a sixth slated to open at a later date)—each specialising in a different pillar of washoku—collectively known as The Table.
A regular haunt of New Yorkers and Hollywood celebrities, the Michelin-starred Sushi Azabu opens its first outpost in South East Asia. Under the skilful hands of Japanese-trained chefs, traditional house speciality sushi featuring the freshest seafood from Japan is served with refinery and a side of Omotenashi—warm hospitality and a spirit of respect.
Whispers in the wind say that the secret of the beauties of Hakata lie in one simple element—collagen. Farm-fresh chicken simmering in pots of golden broth packed full of nutritious collagen is the specialty at Toriden. An elevated take on tonkatsu comes courtesy of an artisanal approach at Tonkatsu Anzu. Premium, aged pork is carefully slow cooked to achieve the unforgettable favours of home.
