The intimate evening promised–and delivered—an extraordinary fusion of exquisite cuisine, premier champagne and luxurious caviar, creating an unforgettable celebration of flavour and sophistication.

This meticulously curated dining experience, helmed by the new Executive Chef, Mr. Unaver V. Unabia, began with a sparkling toast Taittinger Prestige Rosé Magnum. The evening began with a refined hors d’oeuvre: a chilled tomato cappuccino amuse bouche, paired with Fine De Claire oysters, and Siberian caviar. The caviar served throughout the meal is sourced from Caviar d’Eden, a Singaporean brand acclaimed for its exceptional quality and luxurious flavour.
Guests then indulged in Atlantic crab mousseline with cured beetroot trout, complemented by Taittinger Brut Reserve. The third course featured a smoky foie gras terrine with pistachio goose liver, port gel, and a coffee pastry roll, accompanied by Taittinger Prelude Grand Crus.

The dinner continued with baked cod fish covered in almond crumbles, Highland cauliflower piccalilli, and savoury Oscietra caviar—all harmoniously paired with Taittinger Comtes de Champagne Blanc de Blancs 2012. A refreshing sorbet set the stage for its main course: a Wagyu MB6 fillet with chocolate morel, celeriac mousseline, and baby carrots, paired with Chateau Lascombes Margaux 2eme Grand Cru Classe 2015.
The evening concluded on a sweet note with the luxurious Sweet & Savory Mother Earth dessert, a mix of chocolate avocado crémeux and sweet potato toffee, paired with Taittinger Nocturne. The finale was a mignardise of apple sable Breton tart, served with coffee and tea.
