It’s a truth universally acknowledged that no one wants to be cooking up a feast at 4am. However, with Ramadan here, we’re going to have to suck it up and deal with it for the sake of spiritual awakening and self-reflection.
That said, fixing yourself some grub doesn’t necessarily mean three hours in the kitchen and 30 different ingredients. Here are five quick and easy meals you can make with very few ingredients and little more than 10 minutes to spare!
Leftovers
This one is kind of cheating, seeing as it’s not actually a recipe, but it’s worth mentioning. With Ramadan being focused on gratuity and all, it only makes sense that you eat what you already have. No point whipping up something special when there’s still a perfectly good plate of rice sat in the fridge. This month is all about appreciating what we have, people!
Avocado toast
Millennials delight! This is your time to shine. You may not be able to afford a house during Ramadan (or possibly, ever) but you sure will be able to fix yourself an avocado toast. If you happen to find yourself in the possession of an avocado, mash it up and spread it on bread then season with salt, pepper and paprika (a winning combo every time).
If you want to get really crazy, try adding a layer of scrambled eggs and onions over the top for some more flavour, or opt for other toppings such as chopped tomatoes, feta cheese, or smoked salmon.
Omelette
The best part about this meal is that you can make it as hearty or as lean as you’d like. It’s super simple: crack two eggs into a bowl, add a little milk (dairy or substitute) and whisk till smooth. Pour it over a buttered pan, wait for it to set up around the edges then fill it with anything you like.
Potential fillings include cheese, deli meats (halal, of course), onions— whatever you’re craving, really! Oh, and if you get it wrong, no worries—scrambled eggs are tasty too. Have it on its own or with some toast.
Overnight oats
No time like 4am for a little spot of breakfast staples, is there? Overnight oats are a delicious way to get fibre, minerals and vitamins into your diet, with the added bonus of hydrating fruit thrown into the mix. The best part is that there’s no 4am prep involved! It’s in the name—prepare the oats the night before and let it sit for perfect brekkie every time. Malaysian YouTuber Elina shows us her favourite recipes for Ramadan in the video above.
Quesadillas
It’s the perfect meal for the MCO because you only need two ingredients; store-bought tortillas and cheese. Simply sandwich a generous layer of cheese between two tortillas and toast in a frying pan until the cheese melts. Cut into triangles and serve with some salsa and guacamole, if you have it. Plus, if you’re in the market for something heartier, add some leftover roast chicken or minced beef with chopped tomatoes and jalapenos to tie it all off.
Kaya butter toast with half-boiled eggs
With the MCO going on, we’ve not been able to frequent our favourite local spots. The solution? Bring the kopitiam to you. This Malaysian breakfast staple has it all—eggs for protein, kaya for sweetness and toast for crunch. The kaya toast part is pretty simple; just toast two slices of bread, spread with butter and kaya and sandwich it together. The eggs take a little more effort, but they’re easy nonetheless.
